iNTRODUCTION...

Bramley apples are loved by chefs because, unlike other apples, they have a light, fluffy texture and distinct flavour which is retained after cooking.

Sweet or savoury, we want you to come up with a brand new Bramley recipe.

Prize: Winner receives a two week placement at the newly refurbished Connaught Hotel in London’s Mayfair, with Michelin star chef Angela Hartnett, as well as £500 for themselves and £500 for their college. Two runners up will also receive £250 each.  

Are you eligible? You must be aged over 15 years and a student on any UK catering course.

Enter Bramley Bursary Competition

NB Basic kitchen equipment and Bramley apples will be provided at the finals, however, finalists will be asked to bring their own additional ingredients, serving dishes and any specialist equipment. Finalists are allowed to bring mise-en-place.

Please state clearly whether your dish comprises a sorbet or ice cream so that freezing time can be taken into consideration – sorbets and ice creams may be prepared in advance.

The competition will be judged by a panel of experts.

Students will have two hours to prepare their dishes.
