
New Bramley classic winner announced
There was an overwhelming response to the New Bramley Classic Challenge and we now have a new classic Bramley recipe to sit alongside the apple crumble and apple pie. Mark Hix, celebrity chef, and Adrian Barlow, Chief Executive of the Bramley Campaign, attended a judging day at Hix restaurant in London to select the winning entry. The Bramley Fidget Pie, created by Ingelin Rees-Roberts, an administrator from Cambridge, was selected as the winning dish. Ingelin’s new classic recipe combines the flavours of cider and bacon with the tangy taste of Bramleys, topped with a light and crisp pastry to create the perfect pie. Ingelin’s prize is a cookery master-class with Mark and the Bramley Fidget Pie is now on the menu at Mark’s restaurant, Hix. This delicious dish could well be seen on more menus in the future.
Due to such an overwhelming response to the competition a runner-up was also selected: Sheila Hayman’s Blackened Bramley Snow.
Bramley Fidget Pie
